We LOVE a Picpoul de Pinet here at The Bubbly Wine Company and we really rave about this wine.
From a family owned, family run winery, Cuvee Caroline has been specially blended to be a gastronomic wine, with the body and balance that is perfect to accompany seafood and fish dishes. Hand crafted by Caroline Morin, the young winemaker in charge trying to express the fabulous terroir through her wines of great finesse and minerality.
A night harvest takes place in order to preserve aromas and freshness and the grapes are immediately pressed at a very low temperatures. Once fermentation is achieved the wine is aged on fine lees with regular stirring to bring richness and roundness.
Full of fresh aromas of white flowers, acacia and hawthorn with loads of minerality, a hint of salinity and bright citrus fruit – This is a “gourmet” Picpoul.
Our favourite ever pairing for Picpoul is Potted Crab. The freshness of the wine is perfectly matched with the freshness of the crab meat but the acidity beautifully cuts through the butter and richness of the dish. Absolutely delicious but also amazing with any light white fish, prawns and crayfish.
